Young Chef Guided By Mentor At Cameron House
Springboard Future Chef Competition
Over the past month Abby Coote, a pupil at St Peter the Apostle High School in Clydebank, has been mentored by Gemma Arnott, head chef at The Clubhouse at Cameron restaurant at Cameron House, after winning the Dunbartonshire local final of Springboard’s annual FutureChef competition.
Since early January, Gemma has worked closely with Abby to prepare her for the Central & South Scotland regional final of FutureChef, which took place on Friday 8th February at Glasgow City College. In a strong competition of 12 finalists Abby came an impressive second place, she presented a dish of duck with an orange and carrot puree, mangetout and potato rosti, followed by raspberry and white chocolate profiterole dessert.
She said: “I have learned so much from Gemma in such a short space of time. She has taught me a range of new techniques and really helped me through this process. While I would have loved to win the regional final, I’m really pleased with getting this far in the competition and I’m excited to try again next year.
Gemma Arnott, head chef at The Clubhouse at Cameron Restaurant at Cameron House, said: “It’s essential for our industry that we focus on developing the next generation of Scotland’s culinary talent and I’ve thoroughly enjoyed working with Abby. She is a very driven young chef and worked incredibly hard for the regional final. While she narrowly missed out on taking first place, she received fantastic feedback and encouragement from the judges.”
Gemma’s passion for developing culinary talent has seen her team at The Clubhouse at Cameron deliver some of Scotland’s finest clubhouse food. Her participation in Springboard’s FutureChef competition as a professional mentor has involved providing one-to-one lessons with Abby over the course of a month.
Springboard’s FutureChef Central and South Scotland regional final took place on Friday 8th February at Glasgow City College. Winner Jessica Mitchell, a pupil at the High School of Glasgow, will now go on to represent Scotland in the national final at Westminster Kingsway College on 18th March 2019.
